nanna's recipes
Nanna's traditional blackberry and apple crumblepreheat oven to 180C (350F) gas 4 and heat baking tray in the oven
you need:
4-5 cooking apples, peeled and cored
250g fresh or frozen blackberries
4 tablespoons caster sugar
1/4 taspoon mixed spice
finely grated zest and juice of a lemon
simply put prepared apples in a large bowl, add the blackberies, sugar, mixed spice lemon zest and juice and toss well to mix and then transfer to a shallow ovenproof dish
and for the crumble topping
200g plain flour200g chilled unsalted butter, cut into cubes
75g demerara sugar
a pinch of salt
either gently by hand by hand rub the butter into the flour with the salt until the mixture resemble breadcrumbs- or alternatively use a food processor - then stir in sugar
then lightly scatter the topping mix over the fruit - put the dish on the hot baking tray for 50-60 minutes until golden and bubbling
simply served warm with custard just like as Nanna used make, or maybe with vanilla icereamnote:you can put the mixture in a plastic bag and chill in the fridge
until you're ready to add the fruit mixture and cook the crumble, or
alternatively freeze until you want to use it)
nanna's butter scones
preheat the oven to 200C/400F/Gas6
you need
you need
300g plain flour
25g baking powder
100g unsalted butter, cut into cubes
200ml milk
1 egg
100g vanilla sugar
* for fruit scones, add 50g sultanas
sieve the flour and baking powder into a large bowl
add butter and rub it into flour with your fingertips until the mixture resembles breadcrumbs
- add sultanas now if you're making fruit scones
warm milk in saucepan over a gentle heat -then remove from stove, whisk egg and sugar into the warmed milk and pour the liquid into the flour, mixing it all together
leave dough to stand for 5 minutes, then turn it out onto a lightly floured work surface
and knead it together to form a smooth ball.
roll out the dough into a rectangular about 1.5cm thick, cut out 12 scones, using a 6cm cutter and place them upside down onto a floured baking tray, lightly dust the scones with some more flour,
then leave them to stand for a further 10 minutes before cooking
to give the baking powder begin to act like yeast does to bread
cook the scones in the preheated oven until golden brown for about 12 minutes
serve them just with butter, jam and maybe some cream
