'Jenny recalled: "The most wonderful thing that happened at one of the Buckingham Palace garden parties that I was lucky enough to go to was not the fact of the scones but the cucumber sandwiches. They may be a joke to some people, but when you've had a cucumber sandwich out on the grass at the back of Buckingham Palace and the sun is shining and there's mint in it, then you know you've made it! I will never make a cucumber sandwich without chopped mint in it again."

or maybe filled baguette, ciabatta, rolls, wraps or pitta envelopes,
bruschetta, oatcakes, crispbreads or rye bread slices
all delicious with fillings or toppings ...
one of our favourites is a real 'quickie' - Ciabatta bread, cut into thick slices, spread with a little olive oil and pesto then on one slice of bread layer with Parma ham, halved cherry tomatoes and slices of best quality Mozzarella, topped with some torn Basil leaves, covered with a second slice of bread, again spread with a little olive oil served with a green salad tossed in a light vinergarette dressing plus a glass of 'bubbles'!
