bacon and avocado open sandwiches
a large or 2 small ripe avocado, peeled and stoned
3-4 rashers cooked crispy bacon crumbled into small pieces
2-3 tablespoons of mayonnaise
2-3 teaspoons of freshly squeezed lemon juice
a pinch of caster sugar
2 teaspoons of olive oil
a little dijon mustard
freshly ground black pepper and rock salt
in a mixing bowl, mash avocado with a fork until smooth, add crumbled bacon. put the lemon juice, sugar, oil and mayonnaise into a screw top jar and shake until really blended, then slowly add to the avocado and bacon mix until it binds together - spread on a slice of brown bread and season with freshly ground rock salt and black pepper
