sandwiches with eggs and more ...
always cook eggs until hard,
rinse under cold water and peel

egg mayonnaise classic or open sandwiches
slices of white or brown bread, baps or rolls
large eggs
mayonnaise
melted butter (optional)
freshly ground rock salt and black pepper
you just
chop hard boiled eggs in a mixing bowl with mayonnaise and maybe a little melted butter - blend ingredients well together and season with freshly rock salt and ground black pepper

variations on the egg sandwich theme ... add to the mix
finely chopped chives and celery
mustard and cress

dijon mustard
or maybe some chopped pieces of cooked crispy bacon or smoked salmon
